DAY NINETEEN: WALNUT AVOCADO FETTUCCINE
We are getting close to the end of these 21 days of fasting together. I don’t know about you, but I certainly will be making some of these recipes again in the future! Who says eating healthy can’t be fun and tasty too?
Here is yet another recipe that I’m getting ready to try:
WALNUT AVOCADO FETTUCCINI
1- 12 oz. box of whole wheat penne, cooked per box instructions
4 tablespoons olive oil
2 teaspoons chopped garlic, jar ok
1/4 cup lemon juice
10 whole sundried tomatoes in olive oil
1 cup green pepper, chopped
1 cup walnuts, chopped
2 whole avocadoes diced, save 1/2 avocado for garnish
1/2 cup green onion, chopped
1 teaspoon salt
1 teaspoon pepper
Instructions
• Start the water boiling for the fettuccine.
• In the meantime, in a large bowl place olive oil, garlic and lemon juice and whisk together.
• Then add remaining ingredients reserving 1/4 cup walnuts and 1/2 avocado for garnish.
• Stir with a spoon until everything is combined well…set aside and continue with cooking the fettuccine.
• After draining the noodles, add them to the olive oil mixture and toss well
• Serve on a platter, garnish with avocado slices and walnuts…
This dish may be served warm or at room temperature
Serves: 6

yum, i will try this too! doing this fast as well so welcome the idea. but i cannot wait for a scoop of ice cream with milk base!
